Sugarcraft Courses

Cakes of Good Taste hold regular sugarcraft and cake decorating courses throughout the year. The range of courses accommodate beginners through to the more experienced and offer the opportunity of private tuition either one to one or group. All courses are held at Cakes of Good Taste premises in Bushey Heath, Hertfordshire and have limited places. The full list of upcoming courses can be found online below on this page.

You will require some specialist equipment for all of these courses which can be purchased from Cakes of Good Taste with a 10% discount. Equipment lists are sent out approximately 2 weeks prior to the course.  Please note, these courses are highly popular and regularly full weeks before they are due to start. All places are reserved on a first come first served basis.

To reserve a place on any of our courses full payment is required. This is payable by cash, cheque or credit card. Bookings cannot be cancelled and are non-transferable/refundable; but you may send someone in your place.

SPRING SCHEDULE

COURSE ONE – CAKES FOR MEN

Spend the weekend creating a novelty cake for the man in your life.  Carve a 3D chair from cake and learn the art of cutting, shaping and filling a sponge cake and the techniques to cover awkward shaped cakes. Model a man sitting in the chair watching the television (model). The skills learnt on this course will equip you for many future projects. You will be required to bake a cake at home for this workshop.

COURSE TWO – BEGINNERS SUGARPASTE

This course is for those wishing to learn, the techniques and methods to cover a cake with sugarpaste to a high standard, whether you’re a beginner or not you will learn invaluable tips and techniques. Cup cakes are now on all well dressed tables. Your day will be filled decorating cup cakes in many different ways and styles, using sugarpaste, butter cream and fondant and a variety of equipment. COURSE FIVE – CHOCOLATE BOX

Chocolate has become very popular in cake decoration over the last few years. Turn your cake into a chocolate box and fill with scrumptious hand made chocolates and truffles. You will be working with ganache, couverture chocolate and chocolate paste to create a beautifully decorated chocolate box. You will be required to bake a cake at home for this course.

COURSE SIX – MODEL A RAG DOLL

Introducing the new Patchwork Rag Doll Cutter set you will model your rag doll and learn the knack of using your patchwork cutters at the same time. The valuable modelling skills will equip you for many of your future projects. The doll will take pride of place on any celebration cake whether it is for a small child or an adult.

COURSE SEVEN –SUGAR FLOWER BOUQUET

Working with flower paste and a variety of equipment, you will make a bouquet with roses, arum lilies, rose leaves and filler flowers. You will be amazed at what you will achieve in just two days. Once you have learnt the basics of flower making you’ll be able to go onto more difficult flowers and arrangements.

COURSE EIGHT - WILTON CAKE DECORATING – STAGE ONE

Welcome to cake decorating the ‘Wilton Way’. Wilton have changed the format of their courses so be the first to try this very exciting course. This is an introduction to cake decoration with butter cream, a fun course and different to any of our previous courses. You will be working with butter cream and learn how to cover and decorate your cakes to a beautiful finish. You will need to bake cakes at home for this course. The course kit and course book are included in the course fees.

COURSE NINE - SUGAR FLOWERS

Duration is 4 weeks starting on 29th February 2012

Working with flower paste or cold porcelain and a variety of equipment, you will make Agapanthus and gerbera flowers. These flowers will look beautiful in a vase. This is a good opportunity to use cold porcelain which is not as fragile as flower paste to extend the life of your flowers. Ulla’s flowers classes are always informal and very friendly. You will be able to share your interests with fellow students. There will be homework for this course.

COURSE TEN - TWO TIER STACKED WEDDING CAKE

We will cover all the requirements to produce a modern two tier wedding cake; to be covered in pastel coloured sugarpaste. We will decorate with pretty fabric flowers and other techniques to include the use of dowels. Learn all you need to know to produce a stunning cake. You will need to bake the cakes at home for this course.

COURSE ELEVEN – MODELLING FARIES

Following very successful classes in the autumn Frances is running further courses this spring. Your day will be spent modelling and dressing a pretty fairy. With the spring theme you will all dress your fairies individually. Frances has written books on modelling fairies, which she will bring to the course they are full of ideas to give you all further inspiration.

Please note this date has now changed, the `modelling fairies` course was previously listed as 18th March, but will now run on 11th March.

COURSE TWELVE - WAYS WITH WRITING ON CAKES

On this course students will learn and appreciate the techniques, tips and methods of writing on cakes either directly, or using alternative methods, and you will be taught shells and scrolls. Create a colourful sample board for reference at a later date.

COURSE THIRTEEN - MODELLING PEOPLE

Modelling made easy. Spend the day learning the art and skills of modelling. You will spend the day modelling people; which can be used for any occasion on both adults and children’s cakes. Keep the children occupied by passing on your newly learnt skills!

A new highly requested course is added to our repertoire.  This is for students who have some knowledge of sugarpaste and royal icing. We will cover techniques of brush and tube embroidery, filigree work, smocking and more. Create a design in the colour of your choice. Imagine the detail you’ll be able to add to your future cakes.

COURSE FIFTEEN – ROYAL ICING

Complete your repertoire in cake decoration with learning the skills to Royal Ice a cake to a smooth and professional finish.  Decorate your cake with piped royal iced flowers of Roses, Blossoms, and more. Leave the course with the satisfaction of new found skills and a beautiful cake. Piping skills can be transferred to any cakes covered in sugarpaste. You will be required to bake a rich fruit cake at home or use a polystyrene dummy for this course.

Small individual cakes and cookies are popular with guests at all celebration events excellent for gifts, favours and themed occasions. On this course we will decorate using methods, techniques and colour to great effect, including spots, dots stripes and flowers. The cookies and individual cakes are included in the course fees.

COURSE EIGHTEEN– MODELLING TINY SHOES

After very successful class in the autumn we have included the ‘Tiny Shoes’ course again. Your day will be spent making various styles of tiny shoes. The shoes are suited very well to cupcakes but can also be used on larger cakes and include a shoe box or handbag. Frances is a sugarcraft tutor and has written a number of books.

COURSE NINETEEN – LIFE SIZE ROSE, BUD AND LEAVES

Make a full size sugar rose with foliage in the colour of your choice; as described in Paddi’s new book ‘Sugar Flowers for Beginners’. This can be used as a cake top; a single rose will look magnificent on its own, or as a display piece in a vase will look beautiful too. The techniques to be used are the all in one method using a large cutter for the inner petals, and then individually wired outer petals.

Some experience of flower making would be beneficial – but not essential
