Meet our Tutors:

Paddi Clark
Is an extremely qualified sugarcraft and cake decoration specialist with over 20 years experience. She has gained distinction in City & Guilds ABC and NCFE national qualifications, and taught the subject at many FE colleges. She is a medal winner in various sugarcraft competitions. A competition judge, external verifier/moderator and has featured on the TV programme ‘Icing on the Cake’. Paddi has demonstrated and taught the subject overseas.....in the USA, Europe, Scandinavia, Channel Islands and New Zealand as well as many towns and cities in the UK. She is a founder member of the ‘Taste of Art’ group who have exhibited Sugar as an art form in art galleries in Surrey and Bowes Museum County Durham. She is a author of 2 books – ‘Sugar Flowers for Beginners’ and ‘More Sugar Flowers for Beginners’ and regularly writes articles for established Sugarcraft magazines. She is a member of The British Sugarcraft Guild.

Ulla Netzband
Is a qualified tutor having passed City and Guild and Awarding Body Consortium in cake decoration and wired sugar-flowers in 1987 with distinction in all disciplines. She has co-written 2 books and regularly features in Cake Craft & Decoration magazine, has won many awards at national and international level and teaches here and abroad. Ulla’s passion is sugar and cold porcelain flowers which are taught to a very high standard.

Carol Haycox
Boasts over twenty years experience in sugarcraft industry, including passing City and Guilds 121 in Royal icing and confectionary. She now teaches and demonstrates all types of sugarcraft internationally. Is experienced in running her specialist sugarcraft shop for a period twelve years and has been teaching classes across all levels, from beginners to experienced in all aspects of cake decoration and sugar flowers for the past fifteen years. More recently has written articles for magazines.

Jean Ballantyne
Studied City & Guilds 7900 in Sugarcraft Skills & Preparing Working Designs in 1994.
CENTRA 138 Sugar Flowers in 95/96 with distinction.
Taught Basic Sugarcraft Skills at Stanmore, Cassio & West Herts Colleges from 2008 to current (Adult Education)
Past Secretary for British Sugarcraft Guild (Bushey Branch)
Demonstrated for this Guild and other branches.

Modelling Figurines’ Freehand with Carol Haycox
Saturday 6th June 2015 10.00am to 4.00pm

This is a one day course that will show you how model figurines freehand, on the day you can choose to model either a boy or girl but you will be taught both

You will learn:
• Proportional sizing
• How to create the features on the face
• Create delicate fingers/nails on tiny hands
• Create movement to bring your figurines to life
• The use of modelling paste verse flower/modelling paste verse sugarpaste and CMC
• Make and use a template
• Use of equipment
• The use of colours, dusts and lustres
• Painting
• The use of specialist equipment
• Opportunity to ask any questions you can think about basic sugarpaste techniques and modelling

• Beginners to intermediate

Two Tier Lace Celebration Cake Finished with a Lace Fantasy Flower with Carol Haycox
Sunday 7th June 2015 10.00am to 4.00pm

This very versatile lace has many uses wedding celebration cakes, cupcakes, cookies and modelling to name a few. You will be amazed at how easy it is with the right knowledge to use and achieve beautiful fine lace.
Mats will be available for your use on the course and also available to purchase in the shop

You will be working on 2 dummy cakes which will be covered ready for use. Carol will demonstrate cutting, covering and how to get a sharp edge around the top edge.

• How to split and level a cake
• Cover a round cake to a professional and flawless finish
• How to apply crumb coating with an explanation of why this is necessary
• The use of butter cream fillings and flavourings
• Tricks of the trade when using sugarpaste avoiding air bubbles and unwanted lumps, bumps and tares

This is a one day course that will show you how to handle a medium firm enough to make and handle frills. You will be working on a pre covered dummy giving you the full day to work on your frills creating a beautiful cake, suitable for any occasion.

This is a one day course that will show you how with the use of specialist cutters to make an exquisite peony.
