Meet our Tutors:

Paddi Clark
Is an extremely qualified sugarcraft and cake decoration specialist with over 20 years experience. She has gained distinction in City & Guilds ABC and NCFE national qualifications, and taught the subject at many FE colleges. She is a medal winner in various sugarcraft competitions. A competition judge, external verifier/moderator and has featured on the TV programme ‘Icing on the Cake’. Paddi has demonstrated and taught the subject overseas.....in the USA, Europe, Scandinavia, Channel Islands and New Zealand as well as many towns and cities in the UK. She is a founder member of the ‘Taste of Art’ group who have exhibited Sugar as an art form in art galleries in Surrey and Bowes Museum County Durham. She is a author of 2 books – ‘Sugar Flowers for Beginners’ and ‘More Sugar Flowers for Beginners’ and regularly writes articles for established Sugarcraft magazines. She is a member of The British Sugarcraft Guild.

Ulla Netzband
Is a qualified tutor having passed City and Guild and Awarding Body Consortium in cake decoration and wired sugar-flowers in 1987 with distinction in all disciplines. She has co-written 2 books and regularly features in Cake Craft & Decoration magazine, has won many awards at national and international level and teaches here and abroad. Ulla’s passion is sugar and cold porcelain flowers which are taught to a very high standard.

Carol Haycox
Boasts over twenty years experience in sugarcraft industry, including passing City and Guilds 121 in Royal icing and confectionary. She now teaches and demonstrates all types of sugarcraft internationally. Is experienced in running her specialist sugarcraft shop for a period twelve years and has been teaching classes across all levels, from beginners to experienced in all aspects of cake decoration and sugar flowers for the past fifteen years. More recently has written articles for magazines.

Sugarpaste Techniques for Beginners using FMM Press Ice with Carol Haycox
Saturday 18th October 2014 10.00 am to 4.00 pm

This is a one day course that will show you how to handle sugarpaste professionally to cover a cake to a high standard and decorate with the use of FMM press ice and finish off with a frill and sugar roses
You will learn:
• How to split and level a cake
• Cover a round cake to a professional and flawless finish
• How to apply crumb coating with an explanation of why this is necessary
• The use of butter cream fillings and flavourings
• Tricks of the trade when using sugarpaste avoiding air bubbles and unwanted lumps, bumps and tares
• The use of flower/modelling paste
• The use of press ice
• Piping
• All in one rose
• Pulled flowers and leaves
• To make a frill
• The use of colours and dusts
• The use of specialist equipment
• The use of royal icing
• The use of ribbons to add finishing touch to your cake

Egg Free Baking and Decorated Plaque with Carol Haycox
Sunday 19th October 2014 10.00am to 1.00pm

This workshop will show you how to bake the perfect eggless sponge.

You will learn:
• The difference between baking a single cake and multiple cakes in your oven
• Ensure your cake is cooked evenly
• How to achieve a moist eggless sponge
• Oven temperatures
• Use of equipment
• Lining tins verse non stick sprays
• How to alter and adapt recipes add flavours and colouring

Cupcakes and Cookies – Mother and Child with Carol Haycox
Date to be advised 10.30 am to 1.30 pm

During this fun session you will learn a number of skills. You will be shown you how to work with different covering mediums and a selection of professional cutters, moulds and embossers.

You will learn:
• Self raising flour verses plain flour for cupcakes
• Flavouring
• Hints and tips on making your cookies a delight
• The use of cookie cutters and templates
• Level and cover cupcakes to obtain a good shape – how to cheat
• The use of moulds and cutters to make blossoms and shapes
• Make a rose using a 5 petal cutter
• The use of flower/modelling paste verses CMC
• The use of buttercream
• The use of colours and dusts
• The use of specialist equipment

Writing Techniques with Carol Haycox

This is an evening course that will show you many different methods of writing so your cake will always look professionally finished. Today you will make a sample board for future reference
